Personal Bio: Nikki, a Randolph County native, proudly served in the U.S. Navy for nearly eight years. During her active-duty service, she earned an Associate of Applied Science in Massage Therapy. Following two deployments and assignments at multiple duty stations, she returned to North Carolina and utilized her GI Bill to pursue a degree in Nutrition and Dietetics, ultimately becoming a Registered Dietitian.
She completed her dietetic internship with Morrison Healthcare at Novant Health and was subsequently hired as an Inpatient Clinical Dietitian at Forsyth Medical Center, where she specialized in Renal Nutrition, Limb Preservation, Labor and Delivery, and Women's Health. Drawn to outpatient care and her long-standing passion for diabetes management, Nikki later joined the Randolph Health Diabetes and Nutrition Center.
Beyond her professional endeavors, Nikki is a dedicated spouse and mother to a blended family, with another child on the way. She enjoys cooking, spending time outdoors, and making memories with her loved ones. Passionate about improving lives through nutrition, she is a strong advocate for those facing food insecurity and limited access to healthcare resources.
